Composition by Champagne Paul Launois
This artisan blanc de blanc champagne from the 2016 vintage with 40% reserve wine is bursting with intense minerality, laser focused acidity and freshness. A creamy, vibrant texture with persistant bubbles. Notes of apple, pear, exotic white flowers, lemon curd and brioche with a lively character make this an elegant champagne of great finesse.
Winemaker - Julien Launois
100% Grand Cru Chardonnay grapes from Le Mesnil-sur-Oger
The grapes are cold-soaked for 12 hours for added extraction and a cool, natural alcoholic and malolactic fermentation takes place over the course of several months. During its time in stainless steel tanks, the wine stays in contact with its lees. It then ages in bottle for at least 36 months and over the course of the final four weeks, Julien himself hand turns every bottle—each one averages 25 total turns—before disgorgement.
This is also painstakingly done by hand, or “à la volée,” an old-school approach that only a few producers still practice. A truly "hand made" champagne!
