Monochrome by Paul Launois
Monochrome refers to the unique mineral flavour and colour shading that can only come from the intensely chalky soils of Le Mesnil-sur-Oger, reputed to be the most minerally of all the Côte des Blancs villages. This 2016 vintage made with 30% reserve wine Blanc de Blanc artisan cuvee is a fresh, rich, vibrant champagne with an elegant, clean finish. Toasted flavours of brioche, yeast, apple, cream and citrus shine through. The palate has an extremely soft mousse with supple fruits and steady waves of phenomonal minerality. Chosen as the house wine for a famous 3 michelin starred restaurant, this rare (it's only made in small quantities) and exclusive wine is only going to improve with age. That's if you can resist drinking it now!
